Pan Roasted Halibut
This is good and simple.
1 lb. halibut filet 2T Olive oil 4 T butter at room temperature Pre heat oven to 450F. Heat 2 T Olive oil over high heat in large oven proof pan until just smoking, lower heat to med. high. Sprinkle halibut with kosher salt and corse ground pepper - both sides. Place halibut flesh side down in pan. Heat until brown, about 4 minutes. Off heat flip fish then place in preheated oven for 9 to 10 minutes. Remove from oven and plate. Place butter on top of halibut and let melt. Serve with veg - I suggest asparagus and a small salad. Serve with a lemon wedge and enjoy! Paul |
