If this has already been posted, apologies, but I've never quite gotten down the search function on this board even after all these years.

If you don't want to have to purchase sodium citrate online, you can make it at home:

1. Dissolve 2 tsp citric acid with 100 ml of water
2. Add (1) to 2.5 tsp baking soda in another container. Add the liquid slowly as this will fizz/bubble as CO2 is released during the chemical reaction.
3. Mix until all the baking soda is dissolved/no more fizzing
4. Proceed with the rest of the recipe (i.e., 165 ml more water (or low carb beer, milk, or cream/water "milk", whatever) + 10 oz finely grated cheese)

Do not use pre-shredded cheese.
If too thin for your tastes, use less additional water/other liquid of choice.

Yes, I think I posted it at one point. Bought a really big bag of the citric acid too, but haven't ever made it. Did you try it?

One thing I miss is white sauce, to which I'd often add cheese. I'll try this - it may be a good substitute.

Yes. It works, hence posting it. Why, where did you find the stoichiometry? I ran the equation after finding the Modernist Cuisine blog whilst researching flourless queso recipes and it's mention of sodium citrate being the salt of citric acid. Then I found I reinvented the wheel after the fact... :lol:

If you can afford the calorie/carb count, I say give it a try. I think you'll be pleasantly surprised. I know I have; it even works with extra sharp cheddar. Granted, so far I've stuck with Tillamook blocks...

You should be able to find pure citric acid either in the canning section of your local whatever-mart or natural foods store. Calling around definitely saves time and fuel here.

I believe I bought it on amazon. You can get almost anything there nowadays. :)

I had no idea you could buy it at whatever-mart!
