Question regarding corn syrup replacement
 
Hello again karen, I have a question about corn syrup replacement. I am planning to make low carb caramel and homemade twinkies and I wanted to know if you knew of any good low carb substitutes for corn syrup? I have a bottle of DaVinchi vanilla syrup but it seems too watery. Could I use that or would you recommend another brand. Also do you know of any good low carb marshmallow creme recipies? (This will be the base of my filling for low carb twinkies). Your help would be apreciated. :)

For caramel, your best bet is maltitol, if it's something that you use. It's almost impossible to make a low-carb caramel without it. The corn syrup prevents the caramel (sugar version) from crystallizing, but a small amount of whipping cream can do the trick if you don't stir the caramel as its cooking.

There's a recipe on the Low Carb Luxury site for marshmallow cream. I haven't tried it, but the recipes from there get good reports.
