Philly Cheese Steak Quiche!
Goodness me, atkins has me bein' very creative in the kitchen lately! lol :lol:
This came out soooo good! 1 slice {cut like a pie} is 100% filling! Stacy's Philly Cheese-Steak Quiche Slice half of a med. yellow onion into thin strips. Slice a large bell pepper into thin strips. Take 1 pkg. of hillshire farm Roast Beef{5 oz} and slice in thin strips. {I'd take a few slices at one time/roll up/then slice. Easy/Quick Take 5-6 slices of provolone cheese and tear into strips/chunks..{my cheese came from deli.} In a skillet add 1 heaping tsp. of bacon fat and two thin pats of unsalted butter. Once it melts/bubbly - add onions and belleper. {Med. hi heat} Stir to coat. Sprinkle in fresh cracked pepper. Stir. Turn heat to med. and let them get half tender.. While that's working- In a bowl add 5 eggs - S&P. Whisk well. Add 1/3 C. heavy cream. Whisk. {set aside.} Baking Dish or Pie Plate/ Lightly use cooking spray. Using whole slices of provolone: Coat bottom of dish. {Took 6 for mine.} Add all of roast beef to onions/bell pepper and turn heat off. Stir to combine everything well. Evenly add beef/veggies on top of cheese. Pour eggs over everything. Top with provolone strips/chunks-evenly.. Bake at 300* for 40 mins. {all ovens vary so keep an eye on it.} The top will be golden. *Note* The onions/bell peppers created some water- I took a slice out and then tilted pie plate to empty spot and used paper towel to soak up. End of issue. The quiche itself was not watery. |
I made something like this a few weeks ago:
8 philly sandwich steaks, browned and chopped 1/4 cup sauteed onions 4 oz cream cheese 1 cup shredded pepper jack cheese 1/4 cup cream 5 eggs It was really good. |

I made this tonight, and it was really good! How many servings did you make out of it, though? I made 8, and I'm wondering if I should have done 6.
