what DO you eat?? please help everyone!!
 
I've been "low-carbing" for a month and a half now (I'm good at that!) But this week, I am going to be "yeast-freeing" because I do have symptoms of Candida overgrowth. I know the basics: no caffeine, no cheese, no mayo, no vinegar, but what about stuff like deli ham and summer sausage? I've read conflicting opinions on these items and I eat those as a snack all the time! What is in them that feeds the yeast? Also, I've heard conflicting things on decaffeinated coffee...is it ok or not? So, what do you guys (the candida-overgrowth low-carbers) eat for snacks in general? I need some ideas without having to make a huge meal from a recipe everytime. Thanks in advance. :)

Not2fat - welcome! The things that you need to watch for in luncheon meats of any kind (deli or packaged) is sugar. Sugar can be used in curing hams, and usually is added to sausages - but, if possible, check the labels. As far as decaf goes, I've read that even though it's decaffeinated, there is still mold residual, and it's advised that you stay away from it. I tend to stick with herbal tea...even though it kills me sometimes ;) . Snacks are sort of a personal preferance thing. I like pork skins. I also like mock danish. Hardboiled eggs. I would say you could probably still do the meats if you could find some without sugar - but that's probably easier said than done. Good luck!

Debbie, thanks for the reply...what is mock danish? I've heard of it but never knew what it was. How is your yeast-free diet working? were you in a stall before?

Not2fat - what is mock danish? Heaven? Nirvana? Utopia? For the LCer, it's bliss.

Mock Danish

2 oz cream cheese (soften in microwave)
1 egg
1 tblspn splenda
1 tsp lemon concentrate
1/2 tsp vanilla

Mix softened cream cheese and egg. Add remaining ingredients. microwave on high for 2 minutes.
It tastes better if you don't totally mix the egg and cream cheese; you get little pockets of cream cheese.

There are several variations - let your imagination be your guide. I had fallen prey to substituting cocoa for the lemon concentrate until it dawned on me that I'm not supposed to do chocolate until I'm through dealing with Candida :( .

I had barely started LCing (like ten days) when I discovered I had Candida. I initially lost 8lbs., but have since put it all back on (still eating low carb)...the nature of the beast, I guess. Anyhow, right now my primary goal is to cure the Candida...then I'll worry about my weight.
