Spicy Squash Chips
 
I'm a thrice-over newbie (did LC in 2004, again in 2008, and am back for the -hopefully- final time), and have always been super bad about eating my veggies. I hate all mayonnaise products so all dressing...and hence most salads...are out for me. I did some determined searching on this forum for veggie recipes I would like and was inspired by the zucchini fries recipe. So here's my modified version! :yum:

Ingredients:
One medium squash, chopped into thin slices
Olive oil (just enough to allow the seasonings to stick)
Grated parmesan cheese
Sea salt
Black pepper (grated)
Mrs. Dash Southwest Chipotle seasoning salt
Crushed red pepper (adds the spice!)

I don't measure my spices... so add all spices to taste. I personally like quite a bit of parmesan and a teensy dash of the crushed red pepper because it adds quite a bit of zing to the squash!

Combine all ingredients in a bowl with a top. Shake until well covered. Bake on 425 until tops are turning slightly brown (about 5-10 minutes, depending on how fast your oven cooks).

If you slice them thin enough, they have quite a satisfying crunch, much like fries! Yum!

I'm trying to picture squash being chopped into thin slices. Perhaps because I only have experience with spaghetti squash.

I am guessing that other squash types don't have that "noodle" effect?

What kind of squash were you using?

Sorry! I didn't specify. I despise spaghetti squash, so it doesn't even register as "squash" in my mind. ;) I used bright yellow summer squash.
