Kale & Mushroom sautee
When I'm looking for a fresh, low-carb side dish for dinner, this is my go-to, but I've also been whipping it up for lunch when I get tired of lettuce wraps:
2 - 3 handfuls of fresh chopped kale (it cooks down) 1/2 c or so of fresh mushrooms, sliced fresh garlic and sea salt to taste Toss it in a hot pan over med. high heat w/ a little olive oil and sautee until the kale is wilty, the garlic slices start to clarify, and the mushrooms start to get soft. Throw in a bowl and enjoy! |
