Sugar in pickles?
 
I found some interesting ideas for pickled avocados (https://www.tastingtable.com/cook/n...-avocado-recipe) & wondered how much of the sugar gets into the avocado. Or in any pickled veggie or fruit.

If the sugar isn't a good idea, has anyone made sweet pickles with fake sugar? How did it work out?

Based on the taste of bread and butter pickles, I'd have to guess that a lot of sugar gets into pickled foods. :( On a positive note, the sugar shouldn't be necessary for preserving the avocados.

I don't see why you couldn't sweeten pickles with artificial sweeteners, but I'd be a little afraid to experiment unless I was confident that it would be okay from a food safety standpoint.

The avocado pickles are refrigerator only, & as far as regular pickles go there's no food safety issue (I'm a food safety advisor). Using fake sugar it's a matter of taste. I don't want to waste lovely avocados if fake sugar makes them taste bad. :)

I suppose I could divide the batch in half, or even in thirds. One with no sugar, one with liquid sucralose, & one with Splenda.

Avocado pickles? Interesting! I'm going to look into it. I'd probably try Swerve, Erythritol, Xylitol and/or sucralose for it. What you could do is mix a small sample of brine and sweeten it to see what it'll taste like.

Thanks, Bonnie. Good to know. :thup: I might try these the next time I impulsively buy a 6-pack of avocados on sale and promptly forget about them.

I just hope this turns out to taste good. Back when I was still eating carbs I tried making cantaloupe pickles once. Good thing the chickens liked them so they weren't wasted. :(

Pickled avo...? I'm interested!

I have never made my own pickles, but mt olive makes a variety with Splenda. They turn out really well, so I think homemade would be even better :thup:

Its horrifying how much pickles vary in carb content. I have had jars ranging from 15g down to 1.2g per 100g.
Making my own would be a good way of keeping the carbs down if I can't get the good ones from the supermarket.
Lord knows I have enough empty glass jars waiting to be used.
