will be snacking on tiger nuts later, and probably a greek yogurt (with cinnamon, vanilla, truvia, and a bit of sea salt)

Not very hungry this morning so I had a bowl of microwaved courgette (zucchini) noodles mixed with a couple of ounces of grated fresh parmesan cheese.

Have you tried cocoa chilie?? Yum!!!!! I used this when doing Whole30.
I am not promising the carb counts....you might want to re-figure....but this is awesome!!!!


Chocolate Chili

Ingredients:

2 tablespoons coconut oil

2 medium onions, diced (about 2 cups) – 18 – use 1 and green onions 1 carb a piece/no sugar…. – 6 plus + 9 for onion is 15

Anaheim peppers – 6 carbs

Adobo - 4 carbs

4 cloves garlic, minced (about 4 teaspoons) - 6 carbs

2 pounds ground beef - more

1 teaspoon dried oregano leaves

2 tablespoons chili powder - 4 carbs

2 tablespoons ground cumin

1 1/2 tablespoons unsweetened cocoa - 6 (I use more cocoa and I don't think this carb count is correct....)

1 teaspoon ground allspice

1 teaspoon salt

1 can (6 ounces) tomato paste -25 – don’t use if this carb count is correct….stick with adobo and substitute with avocado – 3 carbs for avacado!!!


If you want it a little redder, you can use some low carb ketchup as the sweet ingredient.



1 can (14.5 ounces) fire-roasted, chopped tomatoes - 9

1 can (14.5 ounces) beef broth

1 cup water

Directions:

1. Heat a large, deep pot over medium-high heat, then add the coconut oil. When the oil is melted, add onions, stir with a wooden spoon and cook until they’re translucent, about 7 minutes. Add the garlic and as soon as it’s fragrant, about 30 seconds, crumble the ground meat into the pan with your hands, mixing with the wooden spoon to combine. Continue to cook the meat, stirring often, until it’s no longer pink.

2. In a small bowl, crush the oregano between your palms to release its flavor, then add the chili powder, cumin, cocoa, allspice, and salt. Combine with a fork, then add to the pot, stirring like you mean it. Add tomato paste and stir until combined, about 2 minutes.

3. Add the tomatoes with their juice, beef broth, and water to the pot. Stir well. Bring to a boil, then reduce the heat so the chili enjoys a gentle simmer. Simmer uncovered for at least two hours. Do not skimp on the simmer! Serve in deep bowls with big spoons.

hard boiled egg with red chile paste

seaweed snacks

diet lemonade

looking at tiger nuts for a snack, and then maybe a greek yogurt....or maybe a cup of broccoli soup.....
or might have cinnamon vanilla chia pudding- better go make some, so that is an option.....had half marathon up steep mountain last weekend, and another 12 miler this weekend, so trying to hydrate like crazy!

I was visiting a friend who insisted I stay for lunch and after a discussion on what I "could not eat" she made a lovely colourful salad from iceberg, yellow pepper, radishes, cucumber, tomatoes and a dollop of tinned tuna. As it was from an "in water" can I added a couple of little packs of Heinz (from the stash I pinch from restaurants and keep in the car)mayo to balance the ratios.

I just made a mock Ruben sandwich with no bread.
I just picked up some fresh deli Boars Head Corned Beef, thin sliced, 0g-carbs.

I Placed 2 slices on plate, side by side.
Big spoonful of sauerkraut in the center of the slice
Topped with 1/2 slice of Havarti cheese on each pile of cold slaw
Fold over each end onto the pile, like a little package.
microwaved 45 seconds to make the cheese melt
Dipping sauce of mayo with a small squirt of low-sugar catsup to make Russian Dressing for the Ruben taste.

meme- i don't eat beef (I was veg for 14 years and beef still creeps me out because it looks much more animal like then say chicken). do you think i could use turkey slices for a rueben? your lunch sounded delicious.

Oh well...you sound like one of my daughters who came out of the skinless boneless age. She still won't eat chicken with bones..eek
I was surprised that when we went out to eat last week she was actually eating beef/steak now. It's a mental thing, I know...I've never pushed her. She did however find out a few months ago that she was deficient in B-12 and that may be what has prompted her to start eating red meat..IDK?
Sure, try it with turkey, why not?

haha- it's a mental thing! i'm working on it- after 14 years it was really hard to eat chicken. i cried the first time, and it took me 4 minutes to eat it!
