Pizza "Frittata"

I know there's a recipe for deep-dish pizza quiche, but I wanted to share my version of pizza. It sounds a little strange, but I swear to you that you get all the flavor and satisfaction of pizza with none of the guilt or bloating. It's very fast to throw together for lunch, too.

Pizza "Frittata" -- 1 serving, approx 10g carbs

1 egg, beaten
1 tsp parmesan cheese
dash Italian herbs
1/4 C pizza sauce
1 oz pepperoni
2 T slivers of onion, sauteed
2 oz mozzarella
1 T parmesan

Preheat oven to 400 degrees. Grease a small skillet. Pour the egg in, add 1 tsp parm and Ital herbs. Cover and cook on low until set. Spread on pizza sauce, top with cheese and then add toppings (your choice of toppings). Place in 400 degree oven for a few minutes until cheese melts. Slide onto a plate and enjoy. Make bigger recipes by using a bigger skillet, and increasing the eggs, 1 per serving.

I simply cannot tell you how this very simple, very fast (made it in 10 minutes the other day) recipe satisfies a craving for pizza. It is so creamy, so gooey, soooo gooood!

That looks amazing, I am going to have to try it

That picture makes me want pizza for lunch!! I did something almost identical to this the other night, but used only a couple of forkfuls of pizza sauce, so I hope mine wasn't quite as carby. It was delicious....wait, I put bell peppers in mine so my carb count was probably about the same..oh well.

That looks like a real pizza!!!
Guess whats on the menu for dinner tonight?!?

ChrisCanDo Tue, Jan-22-08 13:10

:yum: Yum

I don't like eggs but have been trying to convince myself that I do. This sounds like a great recipe for disguising the egg taste.

What a great way to have pizza without having pizza.

Thanks!

You cannot taste the egg at all! The layer of egg is so incredibly thin...it's nothing more than something to keep the toppings together. The key is to use about an 8 inch skillet so the egg later will be very thin. You obviously cannot eat this with your hands, but it is so yummy and satisfying. You can use the amount of sauce you like. I like my pizzas "saucy" so I will spend my carbs on the sauce when I make it and mostly use meat toppings.

Do you just throw the entire pan in the oven??

ChrisCanDo Wed, Jan-23-08 07:44

Thanks Elle,
I have the ingredients on my shopping list!

Depends. If the oven is already on, I will. If not, I cover the pan and let everything melt over low heat.

[EDIT] i figured out my own question. :p

lcbkk Sat, Jan-26-08 00:16

I have a paella pan that is very lonely as of late and I think it is going to get used very very very soon!

NoBREAD Sat, Jan-26-08 09:48

That looks very good Elle. Thanks for sharing.

I have cast iron skillets. One is a 6 inch and one is 9 inch. Do you think it would make much difference which one I use?

NoBREAD Mon, Jan-28-08 17:44

I used the larger skillet and it looked good when it came out of the oven but the egg ended up sticking to the pan. Plus it's a little too eggy for my taste.

I just ended up eating the pepperoni, sauce and cheese and it was still good.

motis Mon, Jan-28-08 21:08

I usually use layered pepperonis for my "crust" but this sounds heavenly! Will have to try it!

ElleH Thu, Jan-31-08 18:40

Interesting. I can't even taste the egg, it's so thin.

Wow that pizza sure looks great. I have the ingredients on my shopping list for tomorrow. So that is one serving for the whole pizza????
Karen.

ElleH Mon, Feb-04-08 15:29

Yep, one serving. It's actually not that big. You can "bulk it up" with protein toppings.

tebesco Sun, Feb-10-08 12:41

Elle, I tried this recipe twice over the last few days and want to say thank you! I have never liked any of the LC pizza crusts I've tried, but yours is perfect -- and so fast!

My family is grateful, too. They love my homemade pizza and now I'm a lot more likely to make it for them because I don't have to eat something else and pretend I don't care I'm not eating pizza. ;)

THANKS for this recipe!
I had it yesterday morning for breakfast (!) and it was wonderful.

I would have taken a pic but I ate it before the camera clicked!

seesah Tue, Feb-26-08 13:58

for a quick lunch & it is perfect! Just what I needed.

rodmick Tue, Feb-26-08 14:27

Oh yummy! Looks great!!!!!

ElleH Thu, Feb-28-08 16:01

Wow, I am excited to come back here and see so many people enjoying this! :)

PrinceVern Sun, Mar-02-08 18:52

Any way to avoid egg taste sounds good to me ^o^

Will definitely give this one a go tomorrow, probably with some diced cooked chicken on top instead of pepperoni~

ElleH Tue, Mar-04-08 17:16

I made this for dinner tonight. Lord, it is SO good. I don't even notice the egg. I'm telling ya, it's a thin layer underneath, not thick at all. I really don't know why I don't make this more often. Every time I make it, I tell myself, "I've got to make this more often!"

Do you lay the pepperonis down and then pour the egg on? That sounds like a possible crispy crust.
