3min Simple Microwave Flax Cracker
 
I saw this recipe 2 days ago here

ITS MAGIC. SO GOOD AND SO FAST. How does the microwave even make such awesome crunch with only flax and water I cannot fathom.

Heres the recipe, for those who don't want to click the link

2 Tbsp flax seed meal
2 Tbsp water
spices to taste (optional)

Mix flax seed meal with water and spices
Let rest 2-3 minutes
Spread mixture on parchment paper
Microwave for 2.5 minutes or until cracker is solid


Added some Italian seasoning and I microwaved mine for 2.5min and it came out perfect. So delicious.
Great for a quick snack. no dehydrating or using the oven. no soaking. instant flax cracker. BAM.

I do something very similar, but usually use a mix of "flours". Lupin flour is good for holding flax together and making a "stiffer" cracker.

I added a little almond meal the second time I made this. It just added a more nutty taste(seasoned with salt and a smidge of splenda). The texture didn't change much. Our microwave is super powered so I had to use 70% power and watch it carefully. The first one was a little 'singed', lol, but I ate it anyway. I like that it is puffy, crunchy and crispy, not hard like rye tak. Yeah, these could lead to too much flax intake!

I can't wait to try this. I've not had a cracker in over 9 months now! Would be a nice change, and I love flax!

I make these and also add a teaspoon each of chia seed and toasted sesame seed. I leave a small portion of the flax seed whole, a pinch of salt, a shake of garlic powder, and a dribble of Braggs Aminos. Really good!
