Does anybody know?
 
I'm confused on the fiber and ECC issue. It's a big thing with Protein Power but I haven't found a mention of it in Schwartzbein Principle unless there is a newer edition. I did see her mention more than once that once the insulin level has been elevated, the damage has been done. So I'm thinking that she doesn't believe in ECC because even if the food is full of fiber, it still raises blood insulin levels just as much as if it weren't. What do you think or am I even more confused??

It's been a while since I read SP but I'd find it very hard to believe the good Dr doesn't believe in fiber and ECC. Fiber, while a carb, is a non soluble one to the human GI tract - it cannot be apsorbed or digested, it cannot effect insulin levels. This is a scientific fact :)

Dr. S. doesn't specifically deal with ECC -- but she is very clear that any grain based foods be high fibre -- i.e. whole wheat,brown rice etc. Carbs are only counted from her carb list and ECC isn't part of it. So if a slice of bread is 15 carbs you aren't supposed to deduct the fibre. I often did anyway by the way (more Ryvita's allowed then!).
