ham wrapped stuffed chicken
 
Hi all I made this with leftovers and it tasted great.

two slices of Ham
1 boneless chicken breasts butterflied
pesto
parmasian cheese
cream cheese
seasoning

lay ham over lapping making an area slightly bigger than chicken
lay chicken on top, season salt/pepper, spread a tsp of pesto(basil) and sprinkle lightly over that the parm cheese. I think put two thin slices of cream cheese end to end on top. I then rolled (alittle tight) the chicken along with ham, put in a greased dish and back. I did for 40 min at 350 degrees. or till ham is crunchy.
oh yummy. Carbs are based on the cream cheese and pesto. Also ham shouldn't be sugar cured. Mine was boiled.

Yummy.. That sounds really great!!
I did oven fried chicken tonight and my grandson who is visiting ate more of it than me.
I usually use chicken thighs because this dish needs the extra fat drippings to actually oven fry in the baking pan.
I put mayonnaise in a bowel, rinse the chicken and then throw it in the bowel of mayo and then add salt and pepper and whatever spices you like. Coat very well.
The breading is made of pork rinds. I leave the bag of pork rinds closed and crush it all with a can rolling back and forth until it is all a powder. Open bag and just Pour it in another bowel.
Dredge chicken into the crushed pork rinds and pack on well.
Place in baking dish/pan and Bake at 425 for 40 minutes.
