Almost Twice Baked Potato
Everytime I make this people go nuts.
I take a Fresh head of Cauliflower and Microwave it in a coverd dish with about 1/4 cup of water in the bottom. Cook until it is tender. Then you will need 1 pkg cream cheese 1 pkg shreaded chedder cheese 5 to 7 strips of Bacon cooked and crumbled about 5 green onions diced up Take the Cauliflower while it is hot and put it in a big bowl with all of the ingredients. Mix it all together. The cheeses will melt and it will all blend nicely. Then spread into a greased cassrole dish and sprinkle with paprika. Bake on 350 for 40 to 50 minutes until browned. It is DELICIOUS!!! |

i did this as a side for dinner tonight. I cut the cream cheese in half and the time was about 35 min to golden ~350 in my oven but was very yummy .....creamy with a rich taste to it ......and with the cheddar cheese and your eyes closed ......and imagining a potato skin its real close to twiced baked.

I make this too...but I squeeze all the water out of the cauliflower after it's cooked using a clean linen napkin. It makes it a bit more solid and potatoey (but you either have to have hands that can handle the heat...or cool it with cold water prior to squeezing.) I usually throw in some butter, salt & pepper too.

I think cutting the cream cheese in half if a good idea. It is a really rich dish and I think with a little less cream cheese it would be just as good.

To reduce the liquid in cauliflower.. I cook it in the microwave in a covered dish that has a removable drainer type dish in the middle of it . Tupperware, expensive but worth it and whooohoooo if you can find it at a yard sale for a coupla dollars ! Even frozen cauliflower works wonderfully.. just pour a lil bit of water in the bottom, slap the lid on and you're done before you know it !

Pampered Chef makes a microwave veggie cooker that has steam vents and places to drain off the water before opening the lid......its very nice and not real expensive.
