Moist Almond Cake
 
I rarely get excited about low carb dessert recipes because they're usually hit or miss for me. However, last night I made this recipe from the Bob's Red Mill site, and I can't figure out why it only has 3.3 stars. It deserves much more.

This cake is so buttery and delicious, even my husband and kids (carb-eaters) loved it. My only complaint is that I found it a bit too sweet, but I'm quite sensitive to sweets now. I subbed Xylitol for the sugar and heavy cream for the milk. I think next time I will reduce the sweetener a bit.

I topped it with organic strawberries, and fresh, unsweetened whipped cream. It was perfect, give it a try!

I made it today - Oh my word is it ever good! It's only "fault" is that it's a bit crumbly - but that may be because we were too eager to try it before it had completely cooled. I'm definitely making it again. I sweetened it with Splenda. Not my favorite but I wasn't sure if liquid sucralose would work. For the milk I used 1/2 coconut milk (the 1g/cup kind) & 1/2 cream.

No strawberries in the garden yet so I made rhubarb sauce. I tried flavoring the rhubarb with almond & it was good - especially with the cake.

It's a good thing I cut the recipe in half. :yum:

I'm so glad you liked it! I've made it 3 times now. Aldi has had organic strawberries for the last couple of weeks, so I'm going tonight to see if there are any left. It's so nice to have a reliable, go-to dessert recipe that works with a low-carb lifestyle. Now if I could only find a decent bread recipe - that's a dilemma I've never really been able to solve.

The best bread recipe I've found is almond bread. Best because it tastes good & is fast. It's almost like real bread. Has more carbs than flax bread - my first introduction to lc bread - but it tastes so much better.

3 tablespoons almond flour
1/2 teaspoon baking powder
1 egg
1 1/2 tablespoons butter

Cook in microwave for 90 seconds on high.

You can cook it in a mug or single serving soufflé dish - I prefer the soufflé dish. Partly because I can more easily mix the ingredients in the dish. Sometimes I make several batches - it keeps well at room temperature in a zip lock bag.

Now that my oven's finally working right, I'm going to try more of the oven-baked lc bread recipes I've collected. Turned out the manufacturer put the wrong manual in with the stove. Found out when I went looking for answers on the 'net & found some excellent YouTube lessons on adjusting for the change from natural gas to propane. The whole stove is working better now! :D
