Anyone have a good recipe for Bran Muffins? Thanks.

Here is one for Oat Bran muffins:


1 3/4 cups oat bran
1 1/2 cups whole wheat flour
1 cup buttermilk
2 eggs, beaten
1/4 cup oil
1/4 cup agave syrup
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 to 3/4 cup blueberries, strawberries, or chopped apple

Mix dry ingredients, if using blueberries, stir into flour mix. Mix eggs, buttermilk, oil and agave, and add to dry mix. Stir gently, until just moistened. Put into paper lined muffin tins, and bake at 350 for 10 to 15 minutes. Makes 2 doz.

78 cal each, 3.4 grams fat, 11.9 grams carb, 2.05 grams fiber, 1 gram sugar

What is agave syrup and where do I buy it?

Agave is a syrup made from the agave plant. It is the consistency of honey, but because it is all fructose, instead of half fructose half glucose, like honey, it has a very low GI. It is hard to find, but your best bet is a health food store, like Whole Foods. (it can be pricey too! ) If you can't find it in a health food store near you, you can get it at a couple places online. One is Golden Tropicals, and another is Sweet Cactus Farms. I use it for a sweetner in baking, and tea, since I will not use aspartame, and I try to avoid other artificial sweetners as well.
