I had some of my first fruit last week. I couldn't resist the gorgeous strawberries at the market. Fruit is the treat I mourn the most!

I created this little dish as a dessert, then found it was a wonderful treat, almost like cereal.

You can adjust carb counts by using one less strawberry, leaving out the Splenda, and using the 1/4 C cream. Adjust according to your needs. All nuts used raw, except macadamias, which are dry roasted. All the best stuff of cereal without the cereal! On the days I use this recipe, I stick with a more meat style diet, hence still staying below my EEC level between 20-25. Careful planning is the key.

Strawberry-Nut "Cereal"

3 large strawberries, minced
1/4 cup macadamia nuts, chopped
1/4 cup pecan halves, chopped
1/4 cup almonds, chopped
1 tsp. Splenda, if desired (not needed)

Combine ingredients in a bowl and top with 1/4 - 1/2 C. heavy cream, and enjoy!

Count with 1/4 C heavy cream, no Splenda

Carbs - 21g
Fiber - 11g
Protein - 14g
