At work we are very close to a Jamican restaurant. They have amazing food but of course it comes with rice and peas ( kidney beans). I make the stewed chicken and eat it with a little sour cream on the side.
In a large baking dish, arrange 10 chicken thighs, with or without the skin. I use without skin because the skin gets soggy. Sprinkle chicken with any spice you want. I use chili sauce, a little bbq sauce, italtian seasoning, black pepper etc.
Cover with water until the chicken is half submerged. Cover with foil and bake at low heat, 300 F. for at least 2 hours.
I cool the liquid and strain off the fat for my daughter who hates fat. She eats it with rice, but I eat it plain, no sauce, just some sour cream. Very good and also inexpensive.
