Hello Roch
Glad to see things are going well.
-- you are supposed to eat (10/12 times your current weight)* calories depending on your actual weight. Now looking at your profile, I do not thing it is appropriate because this would mean eating in excess of 3000 calories.
Roch, you needen't worry too much about calorie counting UNLESS you find that you do not lose at all
-- eating too much fat?..hmmm... counter question: do you eat enough vegetables? 4oz of salad + 4.5oz of cooked vegetables at least (peppers, celery, spinach, leeks, cabbage, cauliflower, asparagus....)
-- for the late eating thing, well, it is advisable not to eat 2 hours before bed at least. Remember, there is no fat burning activity while you indulge in your dreams... unfortunately!!!
-- last but not least, why don't you start a journal? this way, others (more experienced) could look at your foods and advise or comment..
Not answers to all your questions...i know.......
Ciao and good luck
