This tastes a lot like potato soup with cheese, honest! Even my kids love this one; it's hearty, warming and filling. Just perfect for a cold winter day. :D

1 head cauliflower, cut in flowerets
3 cups chicken broth
6 slices bacon, diced
1/2 cup chopped onion
2 celery stalks, sliced
1 clove garlic, minced
8 oz. sharp cheddar cheese, grated
3/4 cup heavy cream
salt and pepper to taste

Fry bacon in bottom of soup kettle until nearly done. Add onion and celery and saute until just beginning to soften. Add chicken both, garlic and cauliflower; bring to a boil. Reduce heat and simmer until cauliflower is very soft. Remove from stove and puree in food processor, in small batches if necessary, and return to pan. Add cream and shredded cheese. Simmer just until cheese melts. Season with salt and pepper to taste.

35 grams of carb for the whole batch and will serve 6, so roughly 6 grams of carb per serving.

Oh, this was really good! And quite filling. Definately a keeper! I added about 1/2 tsp of Thicken Thin /not Starch just to thicken it a bit.

I suppose you could make it in a crock pot, but the whole thing takes about 30 minutes to a hour to put together including your prep time. Once it's made, I bet it would keep hot in a crock pot nicely or even reheat in it (if you happen to have any leftovers ;) ). Whenever I make a batch of this, there usually isn't much left after the husband and kids have had a whack at it. If I want a bowl of this for lunch the next day, I usually have to sneak a bowl out and put in in the refrigerator before everyone else gets to it. :rolleyes:

This was wicked wicked good. It didn't even need cream or cheese. I liked just the cauliflower with bacon and chicken broth.

This was amazing, I made a batch last night and the rest is in the fridge for lunch today .... just divine! - I dropped some of the grated cheese and added some cream cheese (I had some that needed using) and it made it extra creamy ...

Thanks for posting this - its going to be on my "fav" recipe list for a while now!

I made this in my crockpot with a few changes. Forgot the bacon and the celery. I put the chix broth and cauliflower cooking on high with garlic and white pepper for about 5 hours. When I got home I added chunks of pepper jack and cheddar cheese, & heavy cream. Let that cook a little and then used my hand blender to puree it a little. Sprinkled more shredded cheddar on top. So nice and creamy and a good comfort food for a chilly day. Thanks for the recipe. Many variations of this can be made. My DH put in a couple chopped hotdogs in his.

I made this and froze it for a quck lunch- it was sooo good I had to post a reply to bump it up. I left out the celery (not a fan) and cut te recipe in half, but OMG, it is sooo yummy!

This recipe sounds really good, and I want to try it, but I'd like to freeze a few servings for quick meals. :yum: :yum: :yum:

i've made it with leeks and ran it through the food processor to make a mock potato and leek soup.

Yup, it froze wonderfully. I forgot to mention that I removed the bacon pieces (sliced to 1/2" thick) and put the pieces back in the soup after I pureed it. I liked the bite it gave the soup- kinda like having chunks of chicken in chicken soup! Oh, and I just popped it in the microwave to reheat it- sooo yummy!

I made this yesterday and loved it. I took out the bacon per suggestion-before the food processing and put in my refrig and nuked and added on top of the soup with sour cream and grated cheddar later. It was so warm and delish-reminded me of potato. Oh yeah, I left out the celery b/c I was out. Thanks for the bump.

OMG... yum, yum, yum!

I don't think it tasted like potato soup :( Not sure exactly what it tasted like... I only made a small batch so might not have gotten the proportions exactly right. I could have done with more cheese. Didn't use any bacon either, just bacon grease.

I need to eat something else with this. 'cause I ate more than one bowl and could have eaten more. It really is delish!

I just made this soup and it is awesome! It does remind me of potato soup. I was out of onion and celery so I left that out, but it was still delicious. Love the bacon in it!

I c what everyone was raving about. This was delish and hit the spot. I used broccoli and little sausages bc it is what I had. The sausages were cooked already so I just put them in the fo with the onion and celery, blended them and left the frozen broccoli florentines whole. Thank you so much.
