What You need:
350 g smoked salmon, 25 cl double cream, 3 tablespoons olive
oil, 1 bunch fresh basil, 500 g fresh pasta, salt, pepper
Technical Stages:
Cut the smoked salmon in strips. Mix them in a plate with the
cream. Put this plate on a boiling bain Marie in order to heat
up the mix.
Cut the basil leaves and mix them with 2 tablespoons oil. Add
this basil oil to the cream mix.
Cook the pasta in a large pot of salted water with 1
spoon oil, for 4 to 6 minutes according to your taste (al
dente or not).
Drain and pour in the plate. Mix well. Add pepper, mix again
and serve warm.
SLIM VERSION : Use light cream. Use chopped basil rather than
basil oil. A very balanced dish : proteins and omega 3 from
the salmon proteins and glucids from the pasta low level of
lipids, but insaturated fatty acids.
