My new "regular" breakfast is to cook 2 or 3 leafs of a variety of greens (chard, kale, spinach, bok choi) by cutting it up into bite sized pieces with a variety of mushrooms, jalapeno pepper, diced tomato, and adding a splash of water, covering and steaming for 2-3 minutes at a medium high setting. Transfer to plate and sprinkle some type cheese over the top. Then cook a couple eggs any way. I do have a piece of 10-11 gm carb toast and add a latte. Some days I use basically the same ingredients and make an omelet. I needed something to go with the eggs and spuds were out. The variety afforded my mixing and matching the above steamed vegetables sprinkled with cheese is great -- as is the continued weight loss.

Sounds great! I just discovered how tasty Kale is. Doesn't have that earthy taste as spinach does/ So kale in an egg omelet would be delicious. Mary L.

Kale is on my list of "super supplement" foods.
Raw Kale, 1 cup (240 mL) chopped
Calcium 90.450 mg
Magnesium 22.780 mg
Potassium 299.490 mg
Look at those numbers! Ooo-la-la!

isn't that seaweed? is that available at general grocery stores? i coudl really use the potassium!

I Put it in the steamer with lots of fresh garlic cloves,Cayenne Pepper & a little sea Salt..Yummy :agree:
