Hi, Karen,
The charming northeastern US winter weather (extra cold & snowy) has me craving something tropical in nature - perhaps Carribean.
Do you have any suggestions for tropical style meals that I can whip up?
Thanks in advance!

Jerked chicken or pork with a cucumber, coconut and lime salad? A Jamaican style lamb or chicken curry? Calaloo soup with crab?

Karen,
Thanks, those are wonderful suggestions! I'm feeling warmer already in spite of the 2 feet of snow last weekend.
Now if I can only figure out where to get callaloo...

You can use spinach or kale instead.
