I just found this bread recipe and I have a few questions:
Almond Flour Bread
1 pack farmer's cheese
1/2 stick butter
4 eggs
1 tsp. baking soda
2 1/2 cups almond flour
1/2 cup atkins bake mix
1. What is farmer's cheese?
2. How much is a stick of butter?
3. What would be a good substitute for 1/2 cup of atkins bake mix?
Hope someone can help me with this terminology as I can't wait to try this recipe!

The farmers cheese question has come up before - all the Oz info I could find is here in this thread:

From memory a stick of butter is around 110g. If you go to the sticky at the top of the Oz/NZ forum, there's a link to a recipe unit conversion chart.
If you check the Low Carb Products forum, I've seen threads there with Atkins bake mix substitutes.
Meanwhile, this recipe for almond muffins has ingredients that are readily available here, so might help.

Hey Donna, Where's the rest of the recipe??? :q: You had me drooling for this one! Farmers Cheese is a cross between cream cheese and riccota cheese (The one they use in lasagna.) Would like the rest of the recipe. Mary L.

Almond Flour Bread
Ingredients: 1 pack farmer's cheese --
near butter in supermarket
1/2 stick butter -- room temp
4 eggs
1 teaspoon baking soda
2 1/2 cups almond flour
1/2 cups atkins bake mix
How To Prepare: Put farmers cheese, butter, eggs and baking soda in
the food processor until creamy.
Add: almond flour and bake mix. Mix up a few seconds, until everything is combined. The dough is very sticky.
Grease a bread pan well. Oven 350 degrees. Plop the dough into the pan, you might have to use your hands. Bake about 50 minutes, until brown on top.
When it's cool, cut the loaf in half, then make slices off of each half - they're the size of regular bread slices. So, for about 60 carbs a loaf, you get at least 12 big slices of bread at 5 carbs each (less, if you're a fiber subtractor).
Plus, it doesn't taste like SOY!!!! It tastes like whole wheat. You'll want to eat the whole thing - it toasts well,lots of butter - YUMM! I made french toast with it, and once in a while I have a sandwich.
Carbs per serving (including complete nutritional information if known): 34g carbs total
Effort (Easy, Average, Difficult): Easy
I have a soy free version and a great pizza crust I will post.

2 1/2 C almond flour
3-4 eggs
Sweetener (to taste if wanted 1 tbsp to 1/2 c-good for making w/cinnamon)
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp vinegar
1/2 tsp caraway (to get rye flavor if wanted)
(OPTIONAL: 1 c dry curd cottage cheese
& 1/4-1/3 butter (If you use these ingredients you have to blend all but almond flour in food processor and pour into almond flour and mix-the baking time increases to an hour and temp is 350)
Preheat over to 325. Cut wax paper to fit bottom of pan(s) you are using. I use small loaf pans. Butter the paper and put in pan butter side up. Butter rest of pan.
Mix ingredients until just combined (don't overmix) and spoon into prepared pan. Put in center oven on middle rack. Bake for 20 min. If top is firm and steak knife comes out clean, it is ready. Remove from oven and place pan on cooling rack for 30 min or more. Then loosen bread from pan and discard paper.
When loaf is fully cooled (2 hours), slice it thin. I have not gotten proficient with carb measurement, but I would say the total (depending on sweetener and if you use opt ingred) is just over 30 carbs for the basic recipe.

I have this recipe in a 3 ring notebook I made from printing recipes I found on SCD Websites I visit for my sons diet (gfcf). This one was posted by Anna at this website. http://www.scdiet.org/2recipes/bread01.html
