I didn't have a recipe handy a few days ago and got a hankering for some soup. So this is what I did and it was absolutely yummy!

Note: All measurements are approximate as I am a pinch and dash & fly by the seat of your pants type of measurer:

CREAM OF VEGETABLE SOUP
1 large pkg (waxed container) of Lipton's chicken broth
The ends I snapped off a bunch of asparagus, sliced thin
2 med. sized cauliflower flowerettes
About 3 medium size (onion ring size) slices of onion (chopped)
3 mini carrots grated (medium sized holes)
1 stalk of celery chopped
About 1/4 cup heavy cream
Salt & Pepper to taste
A pinch of garlic powder (optional)

Cut veggies into small pieces (cauliflower can be in bigger pieces).
Add the veggie pieces to the chicken broth.
Cook under medium/low heat until veggies are tender.
Add the heavy cream and simmer a few minutes.

No need to thicken with guar gum.

I'd appreciate feedback from anyone who tries this and either loves it or hates it or is indifferent to it. LOL

I make this once a week. Fool around with various ratios of veggies depending on your taste preference.
