Hi,

I've got plenty of snack and breakfast ideas, and in terms of lunch I'm not really free (just chosing whatever's on the menu at work). But I still need ideas for a filling vegetarian dinner.

I wouldn't mind something with eggs, but I can't have too many soy products because of the price. Any economy-dinner ideas out there?

You can make lots of quiche type dishes without the crust and load them with vegetables and cheese. Have you had a look at the Kitchen Forum (http://forum.lowcarber.org/forumdisplay.php?s=&forumid=2) ? I recommend these but there are a lot more...

any idea's for a cheese hating veggie low carb at the moment all i seem to eat are eggs and getting fed up with them

- Tofu, TVP, and other soy products
- soy or whey protein shakes
- peanut butter
- nuts
- dressing up your eggs so that they're not so "eggy", like the pizza quiche recipe in the kitchen forum. ;) It's to die for! :)
