Is there a difference between "wheat glutlen" and "vital wheat glutlen flour"? Is vital wheat gluten flour just whoe wheat flour with wheat gluten added?

I want to make some low carb bread, and the recipe calls for vital wheat gluten flour. I went to an Amish store that has bulk foods, and it had a product labeled "wheat gluten" that was brown and of a very fine consistency. Is this the vital wheat gluten flour?

Any help would be appreciated.

That pretty much sounds like it.

Vital wheat gluten has between 75-80% protein and 24 grams of carbohydrates per cup. Ask if they can give you any more information on the product.

A brand that's readily available is Bob's Red Mill brand. A lot of grocery stores and natural food stores carry it.

can i ask a stupid question..... a lot of people say steer away from gluten.... why?
