In her book, "Food Politics," she often says how "bad"
saturated fat is, without quoting studies, yet several years
before this book was published, scientist Jay Whelan and
others wrote about how arachidonic acid (a polyunsaturated
fatty acid) is the reason for the association between meat
consumption and certain cancers. It's frightening how lacking
in knowledge of the scientific literature such "experts" are.
