Hi! I found this recipe in my Betty Crocker Cookbook and adapted it to LC. This is a very fast, easy, and yummy recipe. I hope you enjoy it!

Spicy Peanut Chicken

Ingredients:
1/4 cup Chicken Broth
1 tbs arrowroot (or your favorite thickener)
1 tbs Splenda
2 tbs Soy Sauce
1 tbs white vinegar
1/4 tsp ground red pepper (cayenne)
1 tbs vegetable oil
1 pound boneless skinless chicken breasts cut into 3/4 - inch pieces
1 clove garlic, finely chopped
1 tsp grated ginger root
I medium red bell pepper, cut into 3/4 inch pieces
1/3 cup dry-roasted peanuts
2 green onions, sliced (optional)

Directions:

1. Mix broth, arrowroot, Splenda, soy sauce, vinegar and red pepper.

2. Heat wok or 12-inch skillet over high heat. Add oil. Add chicken, garlic and ginger root and stir-fry until chicken is no longer pink in the center.

3. Add bell papper to wok; stir-fry 1 minute.

4. Add Arrowroot mixture to wok. Cook and stir about 1 minute or until sauce thickens. Stir in peanuts. Garnish with green onions.

Enjoy!

This recipe serves 4. I did a quick carb count in my head (very quick :rolleyes: ) and figure the entire recipe has approximately 20 carbs. Like I said, it was a quick figure :D .
