Here's a recipe I enjoy for breakfast. Sort of a twist on the tuna melt...using zucchini instead of tuna.

1 small zucchini grated....(or 1/2 of large)
1 oz. Cheddar cheese grated
1 egg slightly beaten
1/4 cup ground almonds


Mix that together, add salt and pepper. Fry in pan with olive oil on low heat. Wait til it's golden brown to turn. I add a touch of garlic salt as well. Turn and brown. That's it. Just add a touch of butter, and it's great.

Here's the fitday numbers.

Fat: 65 588 84%
Sat: 14 123 18%
Poly: 11 99 14%
Mono: 37 332 47%
Carbs: 12 22 3%
Fiber: 7 0 0%
Protein: 23 93 13%
Alcohol: 0 0 0%


There are 12 carbs altogether, but 7 fiber, to make it 5 effective carbs. Taste great...Victoria

This sounds great! I made a similar recipe this morning before seeing yours. I mixed together a shredded zucchini, two eggs, a little salt, pepper, garlic powder, and a tablespoon of Atkins Bake mix. They cooked up really nice! Then I topped them with grated gruyere cheese. Yum.

I made these for breakfast this morning, and they were wonderful.

Just BTW, I came up with a different calorie total - only 370. ;) Slightly lower carb count too, but I guess that depends on how much zucchini you use.
