I'm not sure if I am spelling it right but I made crepes for my daughter and I for breakfast and they were fantastic!

Crepe
1 egg
1 tsp atkins bake mix
2 tbsp water
1/2 tsp vanilla
1 tsp splenda
1 tbsp butter

beat egg and mix with all ingredience except butter. heat small fry pan on med heat, melt butter and spoon 1/2 of mixture in pan.
makes a thin pan cake ( deflates when removed from heat)

Filling
3 oz cream cheese
2 tblsp sugar free raspberry syrup
1/3 cup heavy cream

mix all ingredience well and spread on warm crepe and and roll up
like a burrito. I sprinkled a little splenda on to like powdered sugar. This is a real treat for breakfast as well as a quick dessert.

What is the carb count on this one>? I love crepes and cant wait to try! I guess I just refuse to buy the Atkins Bake Mixes and brand stuff too expensive , Any substitute ideas??

This sounds a bit like what I have been making for breakfast lately.. but without any bake mix... this is what I do...

zap 1oz cream cheese in the micro for about 20 secs..add 1 pkt splenda, 1/2 tsp vanilla, and a dash of cinnamon.. set aside

Beat 1 egg with 1 packet of Splenda.. Melt 1TBS butter in nonstick frying pan and add the beaten egg and let it spread out in the pan..cooking til it is set and beginning to turn brown. Remove from heat and spread the cream cheese mixture over the egg and roll like a crepe.

soooo yummmmy :yum:

I have thought about how to make these other flavors.. like using the flavored syrups in the cream cheese.. or maybe splurging and chopping up a strawberry in it or something.

:help:I made the crepes this morning. But I couldn't find the SF Raspberry syrup, so I bought SF Hazelnut Syrup. That was my first mistake...I think it would taste better with the Raspberry.

The part I had trouble with was the syrup. I was making the crepes for me and my husband, so I made a double batch.

I doubled everything in the filling too...but it was very liquidy. I think 1/3 cup of cream is too much....well..in my case...2/3 cup cream! I ended up adding more cream cheese to the mixture...and had a ton of filling left over!

I think next time I'll just use plain old cream cheese!!! Maybe add some cinnamon or something! :)

I bet Soyflour would work, even though I know many people dont care for it...
