I'm new. To this forum, that is. I'm just getting back after my son's birth. Twenty months ago, by the way. It was so easy to do this diet before. Now its like impossible.
My question is, what are some good foods to eat that don't need preparation. I hate to cook and need some help. I'm on the induction. Or something that only takes 5 or 10 minutes.
Does anybody know a really delicious egg or omelet recipe. I've tried whipping cream, water, and milk. I've put dill, salt and pepper in eggs(not all at the same time of course) and eggs are still eggs. Blah.
One more, when a recipe calls for heavy cream does that mean heavy whipping cream?
Thank ya'll
Mary

There's a recipe link in the orange bar at the top. It will take you to some great recipe ideas. There's a mock egg mcmuffin recipe, and crustless quiche that are amazing. The crustless quiche can be made in muffin cups, then frozen and quickly heated in the microwave.
Yes, heavy cream is liquid whipping cream.
A lot of stuff can be made ahead and left in the fridge or frozen. When I'm preparing dinner, I often take the time to prepare a batch of other stuff too (like a batch of home made meatballs or an LC meatloaf) for slicing and munching or futurre breakfasts and lunch. My lunchtime salad for the next day is always made at dinner time the night before when I'm preparing that evening's salad.
It takes a bit of time to get into a new routine, but the prep and planning ahead makes it worthwhile.

Yes, heavy cream is the same as heavy whipping cream.
I don't love plain eggs. Here are a couple of egg recipes I use:
Egg-Skins (like potato skins???)
Scramble eggs, top with cheddar and finely chopped bacon. Serve with sour cream.
Sausage-Egg Muffins
1 lb. sausage, cooked and drained
1 dozen eggs
2 cups shredded cheddar
Mix together and fill muffin tins. Bake at 350 until cooked through. Makes 18 muffins, about 1 g of carb per muffin. Even tasty reheated in the microwave.
Don't feel bad. My boys are 3 & 4 and I still blame "baby-weight". ;)

Thanks ya'll. Stupid, but I didn't even think about checking the recipes. I just found ya'll late last nite and then had to go to bed. Then I had only a few minutes this afternoon. But thats a great idea. Knowing me tho, I'll find so many I like and get overwhelmed. I always overdo things. Guess thats why I'm 60 lbs overweight. LOL
I know how rewarding it can be. I lost 30 lbs on Atkins, 3 years ago. I was overweight and having a hormonal imbalance. I really wanted another child and was having trouble conceiving. I thought that if I lost some weight it would help. So I had a really great motivation. But now I'm right back where I started and have to do this for me only.
Thanks again

dont say "me only"....you are the greatest motivation for yourself! And there is nothing better than feeling good about yourself after you have accomplished something.
I am quite new to this "forum neighbourhood"...but stick around, with a little help we can ALL do this!

Tomorrow I'm making a roast with broccoli and onions, mushrooms, etc. in my new crock pot. It's not 5 minutes, but I only cook for myself and this is an all week meal thing.
Also, anything from last night's dinner can go into my omelettes..easy on the cheese...it's NOT unlimited...veggies, spices, some salsa, sour cream and guacamole makes a great "burrito" type of omelette...very Californian I guess, was new to me, but yummy!
Be creative...don't ever be bored or hungry...no need!
