This is a favorite of mine:

sliced mushrooms - 3 or 4 small ones (I like the brown best)
butter
fresh parsley - enough to make 2-3 tbs when chopped (0r you can use dried but it doesn't taste as good)
some green onion - to your taste
2 tsp wheat bran
2 eggs
parmesan cheese

saute the mushrooms in butter. add chopped parsley and chopped green onion. sprinkle the wheat bran over the veggies and crack the eggs in the pan.stir to mix and remove from heat when eggs are set. sprinkle with parmesan cheese... eat while hot! around 4 carbs...
