I've looked at all the ingredients for spinach dip (cold), and the only one that seems to be high in carbs is the Knorrs Vegetable Soup Mix. Is there maybe an alternative to this ingredient??

Just season it well to taste with salt, pepper, dried onion flakes and garlic powder.
