Pork rinds are great for those who suffer chip withdrawal. I love chips and pretzels, anything salty and crunchy, expecially after a bowl of ice cream, just kidding. Found many ways to use pork rinds, the plan kind and bbq. Watch out for the hot & spicy unless you really want hot & spicy. Tonight I crushed up a bunch of the plain and used them instead of bread crumbs in meatloaf. Tuesday I'm making shrimp scampi and will crush some more for a lite topping. This really grosses my kids out but when I'm going nuts for chips and dip, I'll dip the bbq kind in potted meat, even used them for a tuna dip this week. The list is endless. My next adventure is to try them with butter, splenda and cinnamon.

I never thought I would like those things...I mean eww, they sure sound gross.
By the way, Suzan, pork rinds are commomly discovered in your chip aisle. I found them at Superstore and they have a no-name brand called "Regular Pork Puffs, Friend Pork Rinds" for slightly over a dollar.
They have no carbs and have a satisfying taste, if you were a chip eater. People here have crushed them up and used them as "breading" for various things. I was thinking of experimenting and trying to make stuffing for Christmas turkey with them. What do you all think? I will try it before hand so if it tastes like crap I wont make it with the turkey.

but somehow the idea of using them for stuffing just does not do it for me..
So I figure on using Suzanne somer's recipe for Sausage mushroom stuffing :-)
But using pork rinds as breading I thought was a really cool idea!

Hi Y'all,
My VERY favorite way of using porkrinds is to crush up some regular ones and then add to some ground pecan pieces. (about a cup of each) Add some salt and pepper. Then use that as a breading for either salmon or chicken. Dip the pieces in some cream and egg mixture and then panfry in coconut oil and butter. (make sure to use the pure virgin coconut oil.... a natural metabolism booster and great for you in many ways)

Pork rinds are a favorite of mine. BUT, I have to dip them in fresh salsa. Also good on salads.

I love pork rinds and they are the salvation to my chip/popcorn craving.
The hot ones are hot hot but I eat them like crazy because they make me drink TONS of water! Keeping my water intake up is very hard so this is a huge help :)

the last time I went on Atkins (20 years ago). I loved them and they really helped with the salty/chip craving I had. But I looked for them at my local Safeway and couldn't find them--thought they'd quit making them. I'll have to look around and see. Anyone in the Oregon area who knows which stores carry them? :confused:

Pork rinds you can nuke sort of like popcorn..

Safeway should have them. I know Fred Meyer and Top Foods have them. Look carefully in the chip area, they tend to blend in or on the bottom rack.

I guess you can go overboard on the salt, but it sure it a great snack.

These are the same numbers my bag of piggie puffs has and when I plug them into the Hidden Carb Calculator I get a result of about 4 carbs.....but then other times when I plug the same numbers in I get a negative number....what's up with this?

Thanks--I'll check at those stores. Maybe I just missed them. I am looking forward to eating them with cheese, salsa, etc. and also using them as breading!

I found pork rinds at QFC in Portland. Tried them out the other night as a breading for chicken and it was fabulous. Never thought I'd like them. I still can't eat them like chips. Hope that helps.

We are fortunate, pork rinds abound in our area, Wal-Mart, Food Lion, Kroger's all carry them. Many times their sold out, must be a lot of low carber's in my little town of Mechanicsville, VA. The best are the Kroger brand BBQ. Not to hot and a little sweet.

I just had crushed up pork rinds on Pork Chops. I crushed up the pork rinds in the food processor to get them really crushed and then dipped the chops in egg and rinds then egg and rinds and it worked great. I think next time I will add some seasoning to the rinds.

can you crush them up and use them as a substitute for flour for gravy...
