I was making potato latkes for the family last night, and remembered I had a faux potato product in the pantry called, "Keto Ketato". I decided to try it out and make the "hash browns" as listed on the label. It was absolutely disgusting. I couldn't get past the smell, and unfortunately it tasted just as bad.
Has anyone else used this product? Is there another way to use it that is more palatable? I was wondering if it might be OK as a breading for frying meats.

While I generally like Keto products, I have to agree with you on this one. When my DH started low carbing with me last January, he was really craving potatoes. He always has been a big meat and potatoes eater. I picked up some of the Keto Ketato to try as a substitute for him and I have to say it was probably one of the foulest things I have ever tasted. We each took one bite and immediately scraped the rest of the bowl into the trash and threw out the rest of the container. I can't imagine it tasting any better as a breading substitute than it did as a potato substitute.
If you're really missing mashed potatoes, a great substitute is to cook a cauliflower, drain it well and mash it like you would mashed potatoes with whatever seasonings you like. Make sure you drain it well or it will mash up runny. I like to add a bit of sour cream, garlic, cheese and maybe a sprinkle of bacon and green onions to mine along with a beaten egg and then bake it in a greased casserole dish until the cheese melts. It's not exactly mashed potatoes, but the texture is similar and it tastes yummy.
A couple of good breading substitutes are crushed pork rinds or parmesan cheese. Keto also makes a breading substitue called Keto Crumbs. I've used these a couple of times in making meatloaf but only use about 1/4 cup otherwise the meatloaf will come out dry (those crumbs suck up all the juices).

Keto Ketato Mix:
Here's a product that will once again grace our Thanksgiving meal in style. It's one of those things that makes meals –– especially holiday meals –– feel more "normal" and traditional. Afterall, what will you put that wonderful low carb gravy on?
And now before you say "I've tried them and they were NOT like potatoes...", or "I didn't like those things...", it's almost always because the person didn't use them the right way.
There are three main ways to make "Ketatoes" and get a delicious result, and just going by the old label instructions, or just adding water and butter (or just cream, etc) is NOT one of the ways:
Way #1 (Most Basic): Warm 4 oz cream cheese with 2 oz (1/2 stick) butter in the microwave. Whisk to mix. Add onion powder and (optionally) garlic or chives, and mix again. Add 1/4 cup heavy cream, 1/8 cup chicken broth, and 1/3 cup dry Keto Ketato Mix (more for stiffer "potatoes"; less for softer.) Whisk to mix well and microwave again to warm. Serve with additional butter and/or gravy.
Way #2 : Boil Cauliflower (either 1 large bag frozen flowerettes or freshly cut head) until soft-done. Drain well. (I drain in colander and again with paper towels to thoroughly drain.) In food processor or blender (not mixer!) combine cooked cauliflower, 2 ounces cream cheese, 4 ounces butter and seasonings of choice (like those mentioned above.) Process till well mixed. Add dry Keto Ketato Mix to thicken to desired consistency and to add a rich potato taste. Serve as above.
Way #3 : Make Ketatoes as in "Way #1" and add to freshly boiled cauliflower, freshly boiled jicama, or boiled, diced turnips. Process well in food processor. The turnip option is especially good with lots of pepper and a little nutmeg.
