I just can't afford $5-$6 for a loaf of bread. Is it possible to make it? I'd love a bread machine recipe, too.

Thanks

I'm new to this myself but there is a recipe Basic Protein Bread in the back of your Atkins Book under recipes

Have a look at this link (http://www.lowcarb.ca/recipes.html) for LC bread recipes. There are many excellent recipes right here on this site.

This is the one we've been using:

1/4 cup Splenda (6 carbs)
1/4 cup Sugar Twin (2.16 carbs)
3/4 cup butter, softened
6 eggs (3.6 carbs)
2 tsp. vanilla (ours has 0 carbs)
1.5 cups soy powder (12 carbs)
1.5 cups flaxseed meal
2 tsp. baking powder (2.4 carbs)
1/4 tsp salt
1 cup cream (6.4 carbs)

Preheat oven to 350 degrees F. Heavily grease a loaf pan (we use olive oil). Beat moist ingredients, including butter, for 5 minutes. Add dry ingredients and beat on low speed till well-blended. Pour into pan. Bake for 50-60 minutes, using toothpick test to determine when done. Cool for at least 20 minutes before attempting to remove from pan. (32.56 carbs/loaf) We usually get at least ten slices, sometimes more, from each loaf which works out to about 3 carbs/slice or less.

This began as a pound cake recipe but works better as a nutty-flavored bread.
