I was curious how to make merange or divinity in a low carb way.
I know how to make low carb lemon or lime like custard but would like to top it.
Also Divinity is a family favorite but how to "thicken the egg whites" for baking?

Meringue can be made the usual way - just substitute Splenda for the sugar.
Divinity - I'm not sure about that. Since you cook water and sugar to a syrup and then beat in with the beaten egg whites - don't know if Splenda would work the same way. You might try a small batch. Also check lowcarbluxury.com. It might have a recipe.
Here is a recipe for Meringue Cookies -
4 egg whites
12 packets Splenda
1 tablespoon cinnamon
1 tablespoon cornstarch
1/2 cup chopped pecans
1 teaspoon almond or vanilla extract
Beat egg whites to soft peaks. Mix splenda, cornstarch, and cinnamon - gradually beat into eggs whites to stiff peaks. Add extract and fold in nuts. Drop by spoonfuls onto parchment and bake at 250 degrees for 45 minutes.
