This is a nice simple meal. Filling and very low in carbohydrates. Suitable for induction.
A can of chicken broth (lowest in added sugar)
Green onion to taste (I used about 3/4 of the white part and a few slices off the green for color)
A dash of oil (I used stir-fry oil, sesame would also be good)
One egg, beaten
Boil the broth with onions and oil in it. At boiling, pour egg in, using a spoon to get strings of egg instead of clumps. Cook for a minute or until the egg looks done. Serves 1. Approxiamately 2-3 carbs depending on type of broth, amount of green onion, etc.

I have also made this recipe same as above, but I added a slice of fresh ginger as the soup was simmering it gave it a great taste, it is such a pick me up soup. :daze:

I make mine the same way but add a touch of Xanthan gum mixed with a bit of cool water to give it some body. The sesame oil is the flavor secret!

I add shiratake noodles (aka konnyaku). First I cut them to a managable length.
I also like to add cider vinegar and hot sauce, yum! This satisfys my cravings for ramen (stop laughing, I love ramen!)

This recipe book came with my Wok. I found it the other day and have made this soup several times. Guests and family agree that it is fabulous:
1.5 l Water
1 T/S Vinegar
1 T/S Soy Sauce
Slice of fresh ginger
1 Heaped T/S chicken stock
Extra Salt and ground black pepper to taste
1 Egg, beaten
1 tsp Sesame oil
Finely shredded lettuce
Finely cut spring onion (green part only)
Method
In a pot or wok, bring water to the boil with first 6 ingredients added. When soup is boiling add egg in a very thin stream, stirring constantly - the egg makes a fine cloud of petals. Add the sesame oil and boil for 1 minute.
At the bottom of a bowl put some shredded lettuce and spring onion. Ladle soup on top of this and enjoy.
To those who may ask - I have no idea of the carb content of this soup, but judging from the ingredients it can't be that high!

Are the Konnyaki noodles suitable for Induction? I've only started this diet 3 days ago - still a bit of a greenhorn.
