Okay, I was going to make the choco pudding frozen cookies but I couldn't bring myself to have something (that in total) had that many carbs (because I might eat them all). So I played in the kitchen today and came up with this:

1 oz unsweetened chocolate
1/4 teaspoon butter
1 tablespoon cashew butter
1 cup boiling water
1 package know gelatin unflavored.
3/4 cup coffee
1/4 sugar twin brown sugar

Melt the bakers chocolate, cashew butter and butter in the microwave for 1 minute and stir. Add melted chocolate mixture to boiling water and stir very well (looks yucky but continue on). Heat in microwave another 30 secs to ensure it is still very hot. Then add the knox and stir until dissolved. Add coffee and sugar twin and set into fridge until set to the consistency of pudding.

I then took teaspoons full and dropped into little blobs on a cookie sheet and stuck in freezer for an hour. They sorta taste like iced mocha without the cream (sort of). To me they remind me of fudgsicles only not as smooth/creamy.

Regardless they taste great to me and I have a little baggies with frozen cookies for when I have a little choco craving:-D

Thats for the whole recipe which so far has made me about 48 choc-sicles. I still have some of the pudding like mixture in the fridge so I imagine about 60 sicles? So very few carbs per serving:D Next time I won't add the cashew butter because I can't taste it anyhow. Instead I will take some ground up almonds and sprinkle on top maybe...
