They're both used as thickeners, right? What's the difference between these two? Which is best?

Both are soluble vegetable gums (fiber). Both take a bit of practice to use. Guar tends to be less expensive but has a bit more of an aftertaste. Xanthan tends to be more expensive but has a bit less aftertaste.
