Hi Karen! I am basically a newbie, so I apologize if someone has asked you this question already. I have tried to make pancakes with the Atkins Bake Mix and with the Atkins Pancake Mix. Both efforts turned out very eggy :thdown: . I was wondering if there was a way to convert the bread mix into a pancake batter?

Hi CLo!

I have never tried the mixes, but if you take a look through the Bread & Pasta (http://www.lowcarb.ca/recipes/bread.html) recipes, and Breakfast (http://www.lowcarb.ca/recipes/breakfast.html) recipes, you may find a solution.

I've made pancakes from both ricotta cheese and almond meal, and they were quite tasty. There is a recipe for almond meal pancakes in the links provided above.
