1 x 185g tin of Tuna in Oil (0g carbs)
2 x heaped teaspoons (approx 30g) of Hellman’s Mayonnaise (0.4g carbs)
3 x Cherry Tomatoes (approx 50g) (1.5g carbs)
1x Medium Avocado (approx 100g with stone removed) (1.9g carbs)
1 x Spring Onion (0.g carbs)
Lettuce Leaves (approx 0.6g carbs per 35g serving) – rocket, baby spinach and lambs leaves are especially nice for this)

Approx 4.4g carbs (fibre already deducted) per serving – serves 1

Drain oil from tuna, place in a bowl and mash with a fork. Add the mayonnaise and blend well. Cut the cherry tomatoes into quarters, half the avocado into small chunks, and chop the spring onion into small pieces. Add to the tuna mixture and mix well.

Arrange the lettuce leaves on a plate and pile the tuna mixture on top. Cut the remaining half of the avocado into slices and arrange in a fan on the top of the salad. Sprinkle some parmesan shavings over the avocado (optional).

This looks very Yummy I think I will try this for lunck
