Today I had my usual 4:00 munchies. Since I am trying really hard to avoid freeing the craving monster, I had the idea to eat some of the l/o meatballs that I had made last night. I dipped them in some Nalley's French Onion dip, and, yum, they were really good. Only 1.1 carbs for the tablespoon of dip, and none for the meatballs. I plan to bake up a bunch more to keep in the freezer, zap them in the micro, and there you have a quick and filling snack. Not too 'gourmet' for sure, but good!

Hi there, LC Sue. I like to cook up extra meat for snacks too. Cold roast beef/pork/chicken with a bit of mayo or mustard makes a good munchie. Or some tuna mixed with mayo and scooped up with pork puffs (one of the few ways I like pork puffs, by the way). One thing about protein snacks, they're filling - a little goes a long way!

When ya think about it, it is gourmet compared to a boring old bag of chips now isn't it.. Great idea :)
