Good for you, Pattie! Bet that feels good. You are on your way, gal. Burn, Pattie, burn!

This is just my opinion, but it is a strong one. I know others may not agree, but I stay away from all that you-know what- all artificial sweetners, diet bars and prepared foods.(except for my beloved Diet Pepsi, and I have cut waaaaaay back on that)

I have two reasons- first and formost, I don't trust 'em! Second, I think when we eat all those substitutes for the "Real Thing", we don't really re-educate our tastes and palatte, we don't really learn to like simple foods, unrefined carbs, and to stop the cravings for sweets.

This has worked for me- after lo-carbing at the Induction level since May 1, I really don't miss or crave sweets. They are just not a part of my life anymore, nor will they ever be.

You know I have read posts about those who chew up no-no foods then spit them out, thinking that they are cheating the carb monster... I have been on induction for 14 days, and I didn't use any artificial sweeteners,or artificial anything else. I ain't no hero, or an Ain't Saint *heheh*... after all, it was the sweet that I had a problem with~ I felt like I would have killed for a candy bar those first few days of Induction  To me.. the carb addiction is like any other: alcoholics shouldn't be swishing booze around in their mouths, then spitting it out, former potheads shouldn't be toking without inhaling, and IMHO, carb addicts should be watching what they are putting in their mouths as well! After all, isn't part of the reason some of us have gained the weight, and couldn't lose it is due to the way that our bodies process carbs? Think about it.... Many other diets forbid the use of even diet pop because they keep that taste for sweet going... I want to do whatever I can to ensure the success of this~ (No offense intended for those who have no problem with it... :) )

 totally agree with you on that. My problem is not the sweets but the bread and pasta. I grew up across from a GREAT Italian bakery and the aroma of the freshly baked bread gave me a life long addiction to it. I could go without sweets with no probelem, ditto for rice, potatoes etc. but that bread and pasta.....murder. I realized that if I did not want to commit slow murder on my body I had to break the addiction---this WOE seems to be my way out. My only problem is variety. This board has been so helpful. I have been doing this way of eating for almost 40 years because of terrible headaches and stomach cramps. My first introduction was when a Dr. advised me to read "Martinis and Whipped Cream". I usually lose and maintain and then the Bread monster sneaks in the back door :D
Thank you for all the help and I am sure with this board for support it will be much easier.
Tried the mock danish last night and it was okay so I am going to experiment a bit more.

Pattie, I love breads and pastas too... my grama use to bake homemade bread all the time, and she made all of our egg noodles by hand. Big fat dumplings were to die for... when she had left over flour from breading the chicken for frying, she would mix that up with egg, and fry it as well. My grama's side of the family didn't have a problem with sugar diabetes, or as much obesity as my mom's side did... and since my mom had some input on me , I inherited the tendency towards her family history as far as physiology goes.... "Martinis and Whipped Cream" eh? Sounds interesting... there are some doozies in diet books out there to read :read: I have bought and aquired over time more diet books than I care to admit! I do agree with you that this forum is GREAT :agree: and I am so glad it is here for support. Hope your day is a good one~
