Hi, there!

A really simple and delicious thing I do with avocadoes is cut one in half (lengthways around the pit), throw out the pit, sprinkle lemon juice on the 2 halves (and put one in the fridge with plastic wrap tightly over the cut side), then mix a can of drained shrimp or tuna with a good dollop of mayonnaise, add fresh-ground pepper, and spoon the whole thing on top of the avocado. Then eat (you'll need the spoon). It's quick and easy.

There's lots of other things that are a little more complicated, but if I were you, I'd search this LowCarb Kitchen Forum for the word "avocado", using the SEARCH button up there on the right side of the your screen, and find if there are any posts and recipes already here...

Make guacamole and eat it with steak, chicken pork or dip vegetables and pork rinds into it.

Mash it with cooked egg yolks and mayonnaise and stuff the whites with it.

Add 1/2 to a protein shake.

Add it chopped at the last minute to chicken soup.

And there are lots of avocado recipes on the California Avocado Comission (http://) site that are LC or can be easily adapted.

California or Haas avocadoes are lower in carbs than the large, green Florida avocadoes.

I love avocado. I make a quick and easy guacamole.

an avocado
a small tomato
Tasbasco to taste
salt to taste
dash of lime juice

You can take the time to chop up some onions (white or green) and toss em in but I don't think it's necessary. hot sauce isn't really either, actually.

I dip celery or pork rinds in this.

Also for a relatively high carb meal (but delicious) I'll have a taco salad with lettuce, tomato, cheddarjack cheese, black olives, guacamole, pork rinds with melted cheese, a dollop of sour cream, and chicken or beef. I made one I estimated at about 10 carbs. If you keep the proportions low, this is TASTY.

thanks for all the avacado advice, i just bought one and the taco salad sounds great!
