PEACHY-KEEN PANCAKES

1-1/2 Cups almond flour
4 eggs (beaten)
2/3 cup peach flavored water*
2 tbls. heavy cream
1/4 tsp salt
3 packets Splenda

Mix everything together and cook (1/4 cup batter for each pancake) on a hot griddle.

This makes 12 pancakes at 102.4 calories each with 1.5 grams of carbohydrate each after subtracting the fiber.

NOT included in the counts is the butter I brushed the griddle with to cook the pancakes.

I ate mine spread with more butter and drizzled with DaVinci SF maple syrup.

*I used "Clearly American Golden Peach." I get it at WalMart. It's carbonated but has no calories and no carbs. I suppose you could use any flavor. (I'm thinking of using diet cream soda next time!)

This went together fast and you can freeze the leftovers for a quick breakfast during the work week.
