I was wondering if anyone has some suggestions for brands of bacon that are lower in nitrates and made without sugar. I have found some cured without sugar but I worry about the nitrates. Thanks in advance! Cindi

Don't know about brands - we just buy it in a lump here!
Some Jewish friends of mine 'kosherize' meat by soaking it in slightly salty water. It washes the blood out. Maybe washing bacon would wash out some of the crap? It certainly reduces the saltiness out of it as I've tried it.

I've just discovererd that the bacon I've been eating everyday is cured in sugar, but it hasn't had any adverse effect. That I know of, anyway. Maybe the sugar gets burned off when I cook it?

I looked at Whole Foods today. They had a bacon with no sugar but it did have cane juice, whatever that is.

Cane juice is sugar (sugarcane). It's just not refined.
And unfortunately the sugar doesn't get cooked out. There's just not a whole lot of it there. Just make sure you count the carbs shown on the package. And remember that they can show 0 carbs if it is less than .5 grams per serving.

Hi Deb,
i was wondering what you mean by there's not a whole lot of it there. Do you mean they don't use that much of it? If so, it seems like it is probably healthier than regular bacon. :) It did say 0 carbs and 0 sugars on the label.

I don't know if you have a PCC near you but the only kinds of bacon they seem to have are nitrate and sugar free...
