I just made this today, and it was good!(for two)

crack four eggs into a bowl, break yolks and stir a bit (You can scramble if you like or add cream/water to make them fluffy)

Heat a tbsp of butter in skillet and pour eggs in. Cook on one side and then flip the entire thing over to cook the other side.

sprinkle shredded cheese and a few slices of pepperoni (Or whatever else you like on pizza :)

Then i threw the pan in the over under thr broiler for a minute or two to melt the cheese and get the pepperoni hot...

mmmmmmmmm!! :yum:

Why didn't anyone think of this before! I added the cheese, crumbled bacon and turkey sausage ( breakfast style) with fresh parsley. MM-mmm. Thanks!

Great idea. One thing about Atkins is the monotony of breakfasts! But this is worth a look!

Yummmm thanks I was looking for great Breky Ideas. I think that is the most important meal of the day.
