Mexican Quiche

Amount Measure Ingredient -- Preparation Method

8 large eggs -- slightly beaten
1 cup half and half
1 cup El Pinto Hot Salsa
8 ounces cheddar cheese -- grated
6 ounces chicken, canned -- (10 oz. can drained)
15 ounces Eden Black Soy Beans -- drained
2 whole jalapeno chile pepper -- sliced, thin
1 teaspoon garlic salt


Preheat oven to 375. Slightly beat eggs with half & half. Stir in salsa (mine is sugar free/about 1 carb per T.), shredded cheese, chicken and black soy beans & garlic salt. Pour into a greased deep dish pie pan. Put jalapeno slices on top. Bake at 375 for about 1 hour.
